Today’s post is about…giphy (6).gif…no..not the muffin man. But it is probably how he cooks all his entrees and desserts. We are using good ol’ muffin pan to make Spaghetti and Meatballs and Baked Apple Roses.

We will start with dessert first, because that’s how I like it. If you don’t, tough nuggets…or just scroll down for the s’ghetti.

Baked Apple Roses

Ingredients aka what I used for FOUR Baked Apple Roses

  • 1 Gimongous Apple, or perhaps 2 medium ones. Honeycrisp was used here.***

    I know 2 apples are pictured, but I made a judgement call and only used 1. I still have some slices leftover!

    Lemon Juice – 1 tbsp

  • Fruit Preserves – 3 Tbsp – I used strawberry but go crazy and choose a
    different flavor if you want.
  • Water – 2 tbsp
  • 1 sheet of puff pastry
  • Sugar – 2 Tbsp***
  • Cinnamon– 1/2 tsp – you can more or less this, depending on personal taste***

  • Preheat Oven to 375
  • Cut apple in half, core, then thinly slice apples…even if one gets a bit wonky you can always eat it or feed it to your gremlin…
  • Place slices in bowl and toss with lemon and a tbsp of water. Place damp towel on top of bowl and microwave for 3 minutes.
  • DSC_0671Roll out Puff pastry sheet and cut 3″ strips. You can use a pizza cutter for this.
  • Mix the preserve with about a tbsp of water and smear it on the top layer of the strips.
  • Layer apple slices on the top half of the pastry strip. The bottom edge of the apple should hit the middle of the strip. Also when layering apple slices the next apple slice should start from the middle of the previous apple slice… confused? Its ok, I was too when I wrote that sentence.   • Here’s a tad bit better pictures, AND the next step, which is to sprinkle the sugar/cinnamon on top.sprinkled apples.jpg
    • ***Side note – This one had more than a “smear” of preserve
      and was a mess to roll so be warned!!
  • Fold bottom layer up and start to roll your apple stuffed sushi!!!

     

  • Sprinkle more Cinnamon/sugar on top place in greased muffin tin. Bake for 35- 45 minutes!

    Then TADA, the rose buds bloom into a BAKED APPLE ROSE!!

Tips

  1. If you can use muffin liners. I made a mess with my greased non-stick pan. There’s a sugar coating so when it cools, it obviously hardens and makes the rose much harder to remove from the pan.
  2. Let the apples cool down after microwaving otherwise they will melt your pastry sheet –.–;;; trust me I know.
  3. If your apple slices aren’t malleable/flexible/pliable basically not floppy when you hold em’ at one edge and wave, then stick em back in the microwave and wet them a little more.
  4. Instead of sugar you can try honey as a sweetener!

Spaghetti and Meatballs from a Muffin Pan

Now this one is UBER easy. Pretty much how you would make regular spaghetti except this has a crunchy exterior like when you make brownies and people fight over the edge pieces. (BTW edges pieces are MINEEEE).

Ingredientssghetti ingredients

  • Pasta – 6 oz
  • Olive Oil – 2 tbsp
  • Cooking Spray
  • Grated Parmesan – 1/2 cup (more if you like more parmesan)
  • Marinara – 2 cups
  • Cooked Meatballs – 12 oz

Directions

  • Boil Pasta – Al dente about 7 minutes oil and parmesan.jpg– drain and toss with olive oil
  • Cool in refrigerator for 15 minutes
  • Toss with Parmesan
  • Preheat oven to 375
  • Grease muffin pan
  • Add pasta to fill the depressions
  • Add a dollop of pasta sauce on top
  • Add a meatball
  • Add more pasta sauce then top with parmesan! (Ok I might have gone overboard with the parmesan there, but you get the idea)***

  • Bake for 20 – 25 minutes
  • Let cool and enjoy!!sghetti muffin

***Awesome idea – substitute meatballs with chicken and make chicken parmesan, or you can just add mozzarella on top!

Impressions of the Muffin Madness

S’ghetti in Muffin Form – Crispy outer texture, a nice variant from what is normally soft. My spaghetti pasta was super thin so it is much crunchier than it normally would be if I had used a thicker noodle. Just something to keep in mind. Otherwise this dish makes for a cute appetizer.

Baked Apple Roses – Pretty dessert and pretty taste. The apples are slightly tart, while the outer shell is sweet. According to my significant other “It tastes like apple pie, except without all the mush.” Which makes sense because my favorite aspects of these pseudo-muffins are the crispy edges just like apple pie.

Another successful unbirthday adventure with more food for an unbirthday tea party!
